Cilantro-Lime Shrimp

Ingredients:

  • 2 pounds cleaned shrimp
  • Juice of 2 fresh limes
  • 1/2 tbsp garlic infused oil
  • 1/2 tbsp toasted sesame oil
  • 1 tbsp low sodium tamari
  • 1 tsp. organic honey
  • 1/4 cup chopped cilantro
  • 1/4 tsp red crushed pepper flakes
  • 1/4 tsp black pepper
  • Sprinkle of paprika
  • *Salt is optional- I omitted it because tamari already contains a lot of sodium

Directions:

  • Add all ingredients except the shrimp to a small mixing bowl and whisk together
  • Add shrimp to a bowl or container with a lid and pour the dressing over them
  • Mix to coat all shrimp
  • Put the lid on the bowl and let the shrimp marinade in the refrigerator for a minimum of a half hour
  • On medium heat, cook shrimp on both sides in a pan or use a grill if you have one available
  • Shrimp are done when they turn completely pink
  • Sprinkle some more chopped cilantro on top and serve!

*Tip: This pairs well with avocado crema or with thai veggie & rice noodles like I've done (see image below)!
